Cooking with Kimes: Carrot Cake Waffles with Maple Cream Cheese Frosting
These waffles are sure to please, who doesn’t love cake for breakfast? Okay, it’s not really cake, but it is equally as delicious with much less sugar. Change up your waffle routine with this sweet treat!
4 tablespoons of unsalted butter
1 teaspoon of cinnamon
1 teaspoon of nutmeg
2 cups of all-purpose flour
1/2 teaspoon of salt
2 tablespoons of sugar
1 ½ teaspoons of baking soda
1 ¾ cup of buttermilk (or buttermilk substitute: 1 3/4 cup whole milk + 1 tablespoon of white vinegar)
2 eggs - separated
1 teaspoon of vanilla
2 cups of finely grated carrots
*optional, add 1/2 cup each of walnuts, raisins, and/or coconut
Melt butter over medium heat, swirling the pan until light tan in color 3-4 minutes or so. Add cinnamon and nutmeg. Stir and remove from heat to cool.
In the meantime, finely grate 2 cups of carrots (2-3 carrots)
Whisk together flour, salt, sugar, and baking soda together in a medium bowl. In a separate bowl whisk buttermilk, egg yolks, vanilla, and spiced butter mixture until smooth. Pour the wet ingredients into the dry and mix until just combined.
With a handheld mixer or a stand mixer, whip egg whites until soft-medium peaks form.
*tip: soft peaks is just when the egg whites can start to stand up when you lift up the mixer. Picture below!
Gently fold the egg whites into the batter, then add carrots (walnuts, raisins, and coconut go in this step too) until just combined.
The key is to not over mix your waffle batter. The egg whites will make them fluffy and tall, you don’t want to mix all of the air out of them. Less is more here!
Warm up your waffle iron, spray with nonstick spray or melted butter and cook until golden brown!
To keep your waffles from getting soggy, heat your oven to warm (between 170°-200°). Place a cooling rack on a cookie sheet and line the waffles across the rack. Keep in oven while finishing up the others, or until ready to serve.
While the waffles are cooking, mix up this delicious icing
Maple Cream Cheese Icing
1 cup of confectioners sugar
2 tablespoons of softened butter
8 oz. of cream cheese - softened
1/3 cup of maple syrup
Dash of vanilla
Beat butter and cream cheese until light and fluffy. Slowly mix in the sugar and the maple syrup and a splash of vanilla. Whip until smooth and creamy!
Serve over waffles and enjoy!
